3 Cups Rice
1 Cup Olive Oil/Vegetable Oil
Pinch of Sesame Oil
1 Pound Boneless Chicken Breast
1/2 Small Onion
1/2 tsp Vinegar
1 Tbsp Oyster Sauce
1.5 tsp Black Pepper
1.5 tsp Salt or to taste
1/2 tsp Red Chili Powder
2 Dry Red Chili Pepper
3 tsp Garlic Ginger Paste
2 Eggs
1 Whole Bunch Green Onions
1.5 Cups Peeled Carrot Chips Chopped
1 Head of Brocoli
Soy Sauce to Taste
Directions
Heat a Large Wok and add Oil and a pinch of sesame oil and 1/2 a small Onion. Stir until the onion turns a light golden brown. Cook on Medium Flame.
Add the Chicken and add salt, black pepper, red chili powder, garlic ginger paste, red dry chili peppers, vinegar, oyster sauce. Mix together and wait about 5-7 min or until chicken is a bit cooked. Once the chicken is cooked take your cooking spoon and shred the chicken (refer to my video on instagram). After about ten min add carrots and brocoli. Sprinkle a little salt, black pepper, and red chili powder on it. Mix the vegetables Together and then mix everything together with the chicken. Cook for about 3 min and then add 2 eggs. Sprinkle some spices (salt, black pepper) on the eggs as well and scramble. Mix together with everything.
Add 3 cups cooked white rice to the chicken/vegetables and add green onions and soy sauce to taste. Put the flame on low medium heat and mix everything together for about 1-2 min.
* If you want it extra spicy you can add Garlic Chili Oil/Paste.
