Ramadan Kareem

Dahi Bade

*Feeds 2-4 people 


Ingredients 


1 Cup Besan (Gram Flour)

¾ Cup Water 

½ tsp Red Chilli Powder for the Batter 

½ tsp Red Chilli Powder for the Yogurt 

1 tsp Cumin Powder for the Batter 

½ tsp of Salt for the Yogurt 

¾ tsp of Salt for the Batter

Half an Onion Chopped

Half Bunch Cilantro Chopped

1 Seedless Jalapeno Pepper

2-3 Red Dry Chilli Pepper

½ tsp of Cumin Seeds

4 Curry Leaves

½ Cup Oil 


Directions to Make the Bhajiye 

  1. Add 1 Cup of Besan into a Bowl. 
  2. Add ¾ Cup Water, ½ tsp of Salt, ½ tsp of Red Chilli Powder, 1 tsp of Cumin Powder and Mix Well.
  3. Add Half a Large Onion Chopped 
  4. Add Half Bunch Cilantro and Chopped Seedless Jalapeno Pepper. 
  5. Mix Together 
  6. In a Frying Pan, Heat ½ cup of Oil. 
  7. Place one tablespoon of batter into the oil. The oil should not be deep enough to cover the batter. Repeat. 
  8. Fry on both sides until golden brown. 
  9. Set Aside. 

Directions to Make the Yogurt 

  1. Add 1 Cup of Lowfat Yogurt in a Bowl. 
  2. Add ¼ cup of Water 
  3. Add ¼ tsp of Red Chilli Powder 
  4. Add ½ tsp of Salt 
  5. Mix Together 
  6. Add the Bhajiye into the Yogurt and Mix very gently so they don’t break. 

* Last Step - In a separate pan add 1 tbsp of oil - let it warm up then Add  ½ tsp of cumin seeds, 4 Curry Leaves, and 2 Red Dry Chilli Pepper. After 1 min Add this Mixture on Top of the Dahi Bade.

Chicken Pakora

*Feeds 2-3 people 


Ingredients 


½ Pound of Boneless Chicken Breast cut in Cubes 

1 ½ tsp Salt 

1 tsp of Black Pepper Powder

1 tsp of Garam Masala

1 ½ tsp of Red Chilli Powder

1 ½ tbsp of Ginger Garlic Paste (I prefer freshly grounded) 

½ tsp of Turmeric Powder 

2 tbsp Besan (Gram Flour)

1 tbsp Lemon Juice or Half Squeezed Lime/Lemon 

Handful of Curry Leaves Chopped 

2 tbsp Flour 

1 tbsp Water 

½ tsp of Fennel Seeds (Saunf) 

½ Cut Seedless Jalapeno Pepper 

Oil enough to Deep Fry 


Directions

  1. In a large bowl mix the ½ pound chicken cubes with 1 ½ tsp of Salt, 1 tsp of Garam Masala, 1 ½ tsp of Red Chilli Powder, 1 ½ tbsp of Ginger Garlic Paste, ½ tsp of Turmeric Powder, 2 tbsp of Besan (Gram Flour), 1 tbsp of Lemon Juice, Chopped Curry Leaves, 2 tbsp of Flour, 1 tbsp of Water,  ½ tsp of Fennel Seeds, and ½ chopped seedless Jalapeno Pepper, 
  2. Mix Well and Set Aside for about 30 min. (The longer it marinates the better it tastes)
  3. After Marination Heat up Oil for Frying 
  4. Once the oil is Hot, add the chicken pieces and fry until golden brown. 
  5. After the chicken is fried, Remove majority of the oil from the pan and leave about 1 tbsp of Oil and adjust the Flame to Low. 
  6. Add 2 Cloves Garlic Chopped and a few pieces of Seedless Jalapeno Pepper to the oil. 
  7. Add the Chicken Pieces and Cover so the inside cooks nicely. 
  8. After 10 min remove the Chicken Pieces and Serve.
